Pyrenees an adventure i will never forget


  Welcome to my Spanish family: Sonia, Havier, Sergio & Nico.

 
Throughout this amazing experience of Au pairing I got to experience the Pyrenees.
 

I hiked 470km up the side of the mountain & discovered a green area out of nowhere. It was beautiful.


 
The water from the waterfall was ice cold from the snow melting on the top of the mountain. You know what I did I jumped right in. My body seized up but it was worth it.
 

 
 
We had a picnic & spent all day admiring the views sunbathing & meeting random strangers with intriguing life stories.

A slice of Heaven




 
 
                        Lemon Cake
 
There is nothing more relaxing then baking. My favourite cake is Lemon.
 
Ingredients:

175g / 6oz Odlums Self Raising Flour (sieved)
2 Eggs
175g / 6oz Sugar
150g / 5oz soft Margarine
Rind of Lemon
150ml / 1/4 pint Milk
Pinch of Salt

For Lemon Syrup

150g / 5oz Icing Sugar
Juice of 1 Lemon

Method:

1.      Pre heat oven to 180°C/350°F/Gas 4. Grease and base line a 900g/2lb loaf tin.

2.      Put the eggs and sugar into a food processor and process for about a minute and a half, scraping down the sides if necessary.

3.      Remove the lid and drop spoonfuls of the soft margarine onto the mixture along with the lemon rind and process again until margarine disappears (about a minute). The mixture now looks like mayonnaise!

4.      Finally, add the flour, milk and salt and give another “buzz” until mixture is smooth.

5.      Transfer to the prepared tin and bake for about 45 minutes until golden brown and firm to the touch. Remove from oven and place tin on a wire tray.

6.      Meanwhile, gently heat the icing sugar and lemon juice in a small saucepan stirring until a clear syrup is formed. Do not boil.

7.      Prick the warm cake with a fork, then gently pour the syrup over it, until it has been completely absorbed.

That we all have to come to adore & admire. She radiates simplicity.

Had one wedding, two dresses & most importantly style. Already famous for her boho chic & free loving ways. She caught my attention with an unusual yet captivating floral gown. Her icon beauty shown through with matching trails for both gowns. She graced the media with her unusual style & got a thumbs up from fans worldwide. A true beauty & individual. A girl who marches to her own tune.

Jason Derulo ......

 
 

Last night I finally got to treat my boyfriend to a concert in the name of Jason Derulo. Although, as we learned it mainly consisted of "ripped", "no tops allowed", "backing track" & "gym tips" accompanied by excessive dancing. I have to admit I thoroughly enjoyed it.

 
The concert ranged in ages from the wannabe cool dad behind us to the 12 year old struggling in heels. The best part of the concert was a glimpse of Steve Aoki where the place started hopping for those short few minutes. Next time I think we should go to a RAVE!!
 
The after party hosted in Savoy as you may have heard by now was *cough *cough interesting. Reports alleged sexual assault by the entourage & harrashment towards girls of all ages including minors. An invitation to the VIP section I kindly declined.
To finish up our evening we strolled to McDonalds which is standard after a night out. Dreaming of the burgers kept us going all night with a McFlurry topping the icing on the cake. There was a range of entertainment provided with couples who drank too much declaring “They & life themselves was over”. I was actually very entertaining when you were us sober as a judge watching from a far.

Heart & Lung Fondation Fashion Show

On the 10th of April, Carrigaline Court Hotel hosted the fashion show in aid of the Mater Heart & Lung appeal. Following Sarah Jordan’s successful heart transplant at the Mater Hospital in 2012 herself & family hoped to raise vital and much needed funds for the programme which supports patients throughout the country who are suffering from debilitating and life threatening conditions. To provide vital pieces of equipment, support essential training and education and enhance patient care and support.
 
 
 
 
 
It was an amazing night with Sarah herself taking part modelling in the show. Clothes were divine, showcased from several shops around Cork. From the beloved Dress Bar who announced their moving to a new location at Penrose Wharf to the high-street shop Oasis. Whose floral High waisted pants are now amongst my “Wishlist” of desired clothes.

My week with my partner in crime

Every girl needs a partner in crime to help her through life. Mine comes in the name of Stephanie (Steph). She's blonde, health obsessed and in love with Irish (cough, cough..Aidan). Our adventure started from a young age (aged 3 in this photo) and let’s say it was always dramatic. But then again were Aquarians. Exactly 6days apart!! Now 19years old we ended up in the same College, same course, and hopefully (fingers crossed) same house.


To make matters even better she cooks. Though I was forced to tie 50 balloons late in the night. She made me pancakes with lemon and sugar. Best way to my heart is through food and tea. She also made me a cup of tea and let me watch "Honey Badger". If you haven't experienced it yet look it up on YouTube. It gets me every time!!


 
I received my SUAS recognition cert this week for my volunteer work with Sunday's well national school. I dedicated 6hours a week to teaching computer programmes and improving literacy skills.
Overall there is one thing I learned from this experience
"No matter how small you too can make a difference".

To conclude, this could be the picture of my new roomies and me for college next year!!
